WHere is a home-style version of a beverage from a new cocktail list. This is a large-volume pre-mixed that is loaded with essence of a Christmas time, making it excellent for a festive gathering. Save the extra cordial to use in morning drinks, desserts, or to make more rounds of the drink.
The Bikini Cocktail
Yields 10 servings
For the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Drink (makes 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Directions
To prepare the Syrup: Place the listed items inside a pan, bring to a light boil, stirring to dissolve. After that, remove from the heat and leave to cool entirely. Pour to a sterilised bottle, close it and store chilled, it can be stored for up to one month.
To make Batch Mix: Mix the specified liquids in a sizeable container, leave to sit for 60 minutes, then pass it through preferably using muslin, making it fully clarified.
For serving: Measure 85ml of the premix to a cocktail shaker containing ice, gently stirring gently for a minute to cool it down. Filter to a cold coupe glass or equivalent, decorate with a few cranberries adding the final touch with a brief mist of the essential oil over the top.
